You may notice that something is missing from all of the recipes on my site...
Meat. Upon further inspection you may also realize that there are no animal byproducts either. No milk. Cheese. Eggs. Gelatin. Yup, that's right. I'm one of those crazy VEGANS! (Are you running for the hills yet?) No, I am not going to push my lifestyle on you and tell you that you are a horrible person if you eat meat. What I am going to tell you, however, is that I believe everyone can benefit from increasing their fruit & veggie intake. I originally made this lifestyle change in March 2014 to selfishly improve my health. And it worked! But throughout my journey I have researched and learned so much more that now my choices are determined by my impact on the environment and the animals, along with my own personal well being. "But what do you eat?!" - I am asked that a lot! I eat real, whole, delicious food that just happens to originate from plants. I am a total foodie and believe life is too short to eat things that taste like cardboard, so you won't find any of that here. In the coming weeks I will be posting some of my "day in the life" meal plans, make sure you come back & check them out!
