It's no secret, I love holidays. I love decorating. Making themed food. Doing crazy crafts. Dressing the kids up. I love 'em! Even the cheesy Hallmark ones like Valentine's Day. And it's not that I need an excuse to whip up a breakfast like this one, but it seemed perfect for today. Out-the-door chia power donuts from the Oh She Glows cookbook. Fresh strawberries. Bubbly mimosas. And the shining star- chocolate hazelnut hummus. No matter what your views on Valentine's Day, I hope that we can all agree here- chocolate for breakfast is good. When it tastes like Nutella? Even better. When it's pretty healthy? The best. So go ahead and enjoy some guilt-free chocolate for breakfast! Chocolate Hazelnut HummusIngredients: 1/2 cup raw hazelnuts (or toasted if you prefer) 1 15oz. can, or 1.5 cup chickpeas, drained and rinsed 1/4 cup cocoa powder 3 tbsp maple syrup Pinch sea salt 1 tsp vanilla extract Non-dairy milk Additional chopped hazelnuts for garnish, optional Process the hazelnuts in a food processor until they are the consistency of nut butter (scrape down the sides as needed). Add in the chickpeas, cocoa powder, syrup, salt, and vanilla and process until the chickpeas are smooth and everything is combined. Stream in a small amount of non-dairy milk (I used unsweetened vanilla almond) until the desired consistency is reached. You may want to adjust the amount of maple syrup to taste. Garnish with chopped hazelnuts. Serve with strawberries, bananas, or animal crackers.
