To get the kids excited for our trip, we thought that we'd watch some classic Disney flicks. And me being, well... me, decided that I'd come up with fun dinners to match the theme of the movies!
My 4 year old daughter went with me to the library and picked out the first batch. Shockingly- NO PRINCESS MOVIES. Yet. Her #1 choice- Lady and the Tramp. Now I know there really isn't a whole lot dedicated to this movie in Disney World, but it's a fun classic and easy to plan a dinner around, so I went with it. Of course we had to have the iconic spaghetti and meatballs meal! Well, being vegan it was meatless balls. (Can you say that without giggling? Cause I can't!) I found the big box of Gardein at BJ's wholesale club. Spaghetti is from Aldi. And I made a simple sauce because I didn't have any jarred on hand: 2 large cans of diced/crushed tomatoes 1 onion, chopped Garlic, chopped Pinch of salt Basil Oregano Simmered it for a little bit. Done.
For dessert I debated making some elaborate Italian masterpiece... but then came to my senses and decided to focus on the DOG aspect of the movie and made a batch of "puppy chow"!
Super easy- melt 1 cup of (dairy free if desired) chocolate chips, add in 1/2 cup of natural peanut butter, stir til smooth. Mix with 7-8 cups of Chex-like cereal. Then toss with some powdered sugar.
When it came time to eat, I laid a plastic red & white checked table cloth on the floor, put a vase with (fake) flowers in the middle, and lit a candle off to the side... the kids thought it was awesome!
