I'm not sure Bambi plays a huge roll at Disney World, but my 4 year old REALLY wanted to borrow the movie from the library, so I went with it.
At first I was stumped on a menu. Deer. Rabbits. Skunks. Yeah, not coming up with much! Then I thought "DUH, they all eat plants. Like me. Focus on that!" So I came up with the following for our Bambi movie night:
In my extensive Googling for Bambi recipes I came across one for a Carrot Ginger Cream soup served at Disney's Grand Floridian's restaurant Victoria & Alberts. It sounded delicious, but obviously not plant based. So I adapted it by using Earth's Balance in place of the butter, vegetable broth instead of chicken, and in place of the heavy cream I used 2 cans of full fat coconut milk. Perfect!
Our salad was filled with dark leafy greens to boost our vitamin C, fiber, folic acid, potassium, magnesium, etc. intake. I love using a flavored balsamic vinegar instead of heavy, calorie rich dressings. For our flatbread I used a store bought crust, spread on some garlic hummus, then topped with leftover roasted veggies and baked til it was warm and slightly crispy.
For dessert we enjoyed a few "bunny tails" aka coconut macaroons dipped in chocolate!
I used this recipe from Minimalist Baker. I had to add a bit more coconut oil and syrup than what the recipe called for, possibly because I used finely shredded coconut, plus I added a small amount of almond extract. I also melted some dairy free chocolate chips to use for dipping because that's what I had on hand. We all gave the cookies a big "thumbs up"!
