When I realized the Super Bowl is this weekend, I got that sinking feeling in my gut. This used to be the point in the year where my new year's resolutions went flying out the window. Parties filled with all that amazing food. Cheesy, creamy, fried, greasy, sugary. One year I made chicken wing cupcakes. Seriously, a cupcake with blue cheese frosting and a chicken wing on top. Ewww. This one day of pigging out would send me spiraling out of control back into junk food city for weeks. Or months. NOT ANYMORE! I know I can indulge a little and get right back on track after the game. I also know some amazingly delicious foods that taste good AND are good for me. Here's what I'll be eating while watching the game (ok, really I just watch the commercials...) Buffalo HummusSkip the greasy wings and make some spicy hummus! Combine in a food processor: 1 can, or 1 1/2c, of chickpeas (I remove the skins to make it creamier) 1 tbsp tahini 2 tbsp nutritional yeast 1 tbsp Frank's (ok, I use way more... but I love it spicy!) Few shakes of garlic & onion powder Pinch of sea salt juice from 1/2 lemon about 1 tbsp olive oil and then water or the liquid from the can of chickpeas to reach desired consistency Serve with tons of raw veggies! Tortilla PizzasNo need to order out! These pizzas are quick to toss together and you can customize them for each person. Use a "clean" tortilla (read the ingredients! I really like the Ezekiel brand) and layer it with your favorite healthy toppings! I like to use hummus, salsa, or diced tomatoes as my sauce. Add on every veggie imaginable. Sprinkle on some vegan cheese like Daiya, make some homemade tofu ricotta (recipe below) or nutritional yeast, or go au natural and skip the "cheeze" all together! Bake at 400F for 8-10 minutes & enjoy! Tofu Ricotta 1 block of extra firm tofu 1 tbsp garlic powder 1 tbsp lemon juice 1 tsp basil 1 tsp oregano splash of olive oil Mash ingredients together with a fork or pulse in a food processor Mango SalsaThis stuff is delicious on baked chips (recipe below), on top of a salad, over Cajun spiced baked tofu, or just with a spoon! Peel & dice the following: 2 mangoes 1 red onion 1 cucumber 1 red pepper 1 jalapeno with seeds discarded (optional) Place in a bowl, then add a large handful of chopped cilantro. Drizzle the juice from 1 lime over the top, add a sprinkle of sea salt, and stir to combine. Let it sit for at least 15 minutes for the flavors to combine & get happy. Baked Tortilla Chips "Clean" tortillas (like Ezekiel) Melted coconut oil Salt, cumin, garlic powder, lime juice or cinnamon (optional) Preheat over to 350F. Use a pizza cutter or knife to slice the tortilla into chip-sized strips or triangles. Lightly brush with melted coconut oil. Sprinkle on optional seasonings. Bake for 7 minutes, then flip, and bake for an additional 7 minutes or until chips are crunchy (but don't burn them!) Black Bean BrowniesI just leave it to the expert, Chocolate Covered Katie, when it comes to these! But if you want an extra special treat- top them with peanut butter mousse. Or skip the brownies and just eat the mousse with a spoon! Peanut Butter Mousse 1 can whole fat coconut milk, chilled in the fridge at least overnight 4 tbsp all natural peanut butter (or any other nut butter or allergy friendly alternative) 1 tbsp maple syrup (optional) Carefully remove the can of coconut milk from the fridge and open, without disturbing the contents. Spoon out the hardened "cream" on top and place in a chilled metal mixing bowl. Using a mixer, beat until fluffy. Add in the peanut butter and syrup if desired. Keep chilled until ready to use.
